Matured sheep’s cheese aged with ash. Once upon a time there was an elderly shepherd who wanted to put some cheeses to mature in the ash and when he tasted them, he noticed that the ash had improved the aging process, giving the cheeses a particular and very tasty flavor, with a different aspect of the crust from all other cheeses. We wanted to resume this custom by maturing a large sheep’s cheese in the ash, already excellent from the start, which acquires with this maturation, an “ancient” aspect and the flavor of the past. “Once upon a time” is the name of this cheese which, being characteristic and original, is available especially during the Christmas period.
