Sheep’s cheese matured with natural beeswax. Wrapped in beeswax, “The Beehive” finds shelter. The pecorino is aged with natural and traditional methods and then, thanks to the skill of our master dairymen’s hands, it is wrapped in a light cotton cloth and dipped in beeswax. Finally it is tied in a radial pattern to complete and enrich its appearance. The barrier effect created by the wax allows the cheese to continue its maturation avoiding taking on unpleasant odors or flavors. It also allows you to keep the necessary humidity inside to preserve and improve its qualities over time. Once cut, the cheese will keep the rind clean and its heart will have a full, soft flavor, with that slight hint of honey given by the wax, which will delight your palate.
