From a selected national raw material, the rustica is a traditional pancetta with rind, salted in “white sal”, by hand, with salt and flavorings. After salting, it is “folded like a book” and pressed between two woods before seasoning. With a traditional flavor that stands out for its particular sweetness and delicacy. Great impact on the cutting table thanks to the highly handcrafted look.
