Nebrodi Black Pig Salami, produced in an artisanal way with natural dried casing and knife-cut meats, coming from the pork shoulder and the trimming of the thighs. The knife processing allows you to manually eliminate the less valuable parts such as any nerves or connective tissues, which are not very pleasant to cut. It is seasoned exclusively with salt and peppercorns to enhance the flavor of the raw material. This particular native Italian breed of pig widespread on the Nebrodi mountains, in Sicily, has very ancient origins: fossil remains and written documents testify the presence of these animals since the period of Greek and Carthaginian colonization (VII-VI century).
