Tuna in Chianti is a typical Tuscan recipe, which, despite its name, is prepared with pork, aromatic herbs and olive oil. After the long maceration in the oil, the pork takes on a delicate flavor and a very tender texture reminiscent of tuna, hence the name Chianti tuna. Serve this preparation with cannellini beans and fresh onion, or in salads or on croutons.
